French Onion Beans
Hello friends! I know it’s been a while since my last post, so I’m hoping this cozy new recipe will be comeback-worthy. These French onion soup-inspired beans are made with just a few simple ingredients. While caramelizing the onions does take a nice chunk of time, it is a mostly hands-off process, and I promise it is so, so worth it. You’ll have to excuse my photography skills on this one…it’s one of those “don’t judge a book by its cover” sort of foods.

Total Time: 1 hr 15 min.
Ingredients
2 tbsp butter, divided
2 medium-sized white onions
1 tsp soy sauce
1 can white beans
Salt and pepper to taste
Mozzarella cheese (optional)
Instructions
Peel and halve your onions, then slice them into thin half-moons. The thinner you slice them, the faster they will caramelize.
In a small saucepot, melt 1 tbsp of butter over medium heat, then add the onions with some salt and pepper. (Keep in mind the soy sauce is also salty, so go easy. You can always add more later.)
Stir the onions and reduce the heat to low. Cover and let them cook down for about an hour, mixing occasionally.
Once caramelized, add the rest of the butter and soy sauce and pour in the can of beans with their juices.
Bring the heat back to medium, incorporating the beans in with the onions and heating everything through before sampling and adjusting the flavors.
Optionally, you can add some mozzarella cheese. I recommend serving with a nice hunk of crusty bread. Enjoy!
